Makes: 25 cookies
INGREDIENTS: ~ 200 gr panettone ~ 200 gr pandoro ~ 1 flax egg or 1 egg ~ 50 gr butter or margarine Add-ins: ~ 80 gr of a mix of almonds and cranberries (I used 40 and 40 respectively) For topping: ~ icing sugar INSTRUCTIONS: If you're using a flax egg start by combining 1 tablespoon of ground flax with 3 tablespoons of water and set aside. Place the panettone and pandoro in a food processor until they ressemble a thick flour. Add the butter cut into small pieces and mix well with your hands until well combined. Add the flax egg or the egg if you're using one and mix again to blend the ingredients. Roughly chop the almonds and cranberries (or other dried fruits or chocolate) and add to the mixture. Preheat the oven at 180° C. Line a baking tray with parchment paper and make the cookies by rolling a bit of dough in your hands and pressing it down on the parchment paper. Cook for 15-20 and wait until cool to cover with icing sugar! (I used the one that was leftover at the bottom of the pandoro :P) |
