Makes: 9 muffins
INGREDIENTS: ~ 150 gr flour ~ 50 gr grated parmesan cheese ~ 6 gr instant yeast for salty preparations ~ 120 ml milk ~ 1 egg ~ 50 ml seed oil ~ 200 gr artichoke hearts (or other boiled vegetables of choice) ~ salt and pepper INSTRUCTIONS: Preheat the oven to 180 degrees Celsius. Mix the dry ingredients (flour, yeast, parmesan cheese, salt and pepper) in one bowl and the wet ones (milk, oil, egg) in another. Combine the two mixtures with a wooden spoon and mix until well blended. Add the artichokes and stir in the mix until evenly distributed. Grease muffin tins and fill with the mix 2/3 of the way. Place in the oven and cook for about 20 minutes until the toothpick comes out dry when inserted in the center. Let cool and serve! (These are super delicious cold as well which makes them a perfect side to go for lunchtime!) |
