Makes: about 20 cookies (depending on the size)
INGREDIENTS: ~ 1/3 cup seed oil ~ 3/4 cup brown sugar ~ 1/4 cup maple syrup/honey ~ 1/4 cup soy milk ~ 2 cups wholewheat flour ~ 1/2 tsp baking soda ~ 1/2 tsp baking powder ~ 1/2 tsp salt ~ 1/2 tsp of each: ground nutmeg, cloves and cinnamon ~ 1 1/2 tsp ground ginger INSTRUCTIONS: In a large bowl, whisk together oil and sugar until they are nicely mixed (about 3/5 minutes), add the honey and soymilk (which won't really blend). In a separate bowl mix together all the other dry ingredients. Sift half of the dry ingredients into the liquids and mix before adding the rest of the dry ingredients. Mix well until the dough is stiff. Flatten the dough into a disk, wrap in plastic foil and let it rest in the fridge for an hour. Preheat the oven at 180° C. Roll the dough on a lightly floured surface, a little less than 1/4 inch thick. Cut out the shape with the cookie cutters you prefer and transfer the cookies on a baking tray with parchment paper and bake for 8/10 min. The cookies will be soft at first, let them sit for at least 10 minutes for them to harden up and then enjoy! |
