Makes: 20 cookies
INGREDIENTS: ~ 250 gr flour ~ 6 gr baking powder ~ 100 gr sugar ~ 1 tsp vanilla powder ~ 1 egg ~ 125 gr butter ~ zest of 1/2 lemon For the filling ~ Jam of choice (I used strawberry) or butter of choice For topping: ~ icing sugare INSTRUCTIONS: Take the butter out of the frige an hour before using and cut into small chunks and leave to warm at room temperature. In a bowl mix the flour with the butter and all the other ingredients and combine well and fast with your hands until pastry is smooth. Form a ball and wrap with plastic wrap. Place in the fridge to cool for at least half an hour. Once the time is over start preheating the oven to 180 degrees celsius. Roll the pastry into 1/2 cm thickness and make cookie shapes. For half of the shapes you made you want to make a hole in them using smaller sized cookie moulds, that can be the same shape as the outer cookie or even just a small round hole. These cookies with the hole will be the top cookie of the sandwich, as you can see in the pictures, you you can see the jam. Place the cookies on a lined baking tray and cook for 15-20 minutes. The cookies have to be pale, so make sure to not overcook them! After max 20 minutes take them out and leave to cool for a few minutes. When the cookies are still warm but not hot , take the whole cookies and spread about 1-2 tsp of jam on it and then top with the corresponding cookie with the hole in it. This job has to be done after the cookies have cooled a bit as you will risk breaking them if you try and do this when they come right out of the oven as they will still be really soft. After having assembled all the cookie sandwiches put some icing sugar on them! |
