Makes: 1 cake- 10 medium slices
INGREDIENTS: ~ 150 gr white flour 00 ~ 150 gr brown rice flour ~ 80 gr coconut sugar ~ 40 gr brown sugar ~ 200 ml almond milk (or milk of choice) ~ 8 tbsp oil (I used olive oil but other oils should work) ~ 1 egg ~ 500 gr concord grape ~ pinch of salt INSTRUCTIONS: Preheat the oven to 180 degrees Celsius. Wash and dry the grape carefully as to not break any grapes and leave on the side. Whisk the egg with 80 gr of coconut sugar and the oil for a couple of minutes. Add the flour with the salt in two three separate times alternating with the milk. Whisk until the mixture is perfectly combined. Add about 3/4 of the grapes and fold in gently, careful not to break them. Like a round baking tin 18cm in diameter with parchment paper and pour in the batter. On the surface place the remaining grapes and press down on them a little bit so that they partially sink in the batter. Sprinkle the top of the cake with the brown sugar and bake for 30 minutes. Let cool before serving and keep in the fridge after the first day! |
