Serves: 12 muffins
INGREDIENTS: ~ 1 apple, peeled cored and grated ~ 1 cup flour ~ 1 cup old fashioned oats ~ 1 cup yoghurt (can use soy yoghurt, greek yoghurt or whichever you prefer) ~ 1/4 cup honey/maple syrup/date syrup ~ 1 egg ~ 1/2 cup unsweetened applesauce ~ 2 tsp baking powder ~ 1/4 tsp baking soda ~ pinch of salt ~ 2 tsp cinnamon ~ 1 tsp vanilla extract ~ optional add ins: walnuts, raisins.. INSTRUCTIONS: Preheat oven to 200 degrees Celsius and if necessary grease muffin tins (with oil, butter, non-stick cooking spray...whatever works). I suggest using silicone tins to avoid this procedure. In a large bowl combine flour, oats, baking powder, baking soda, cinnamon and salt. In a separate bowl lightly beat the egg and whisk in the yoghurt, applesauce, honey, vanilla and fold in the grated apple. Pour the wet ingredients over the dry ones and mix until well combined without overmixing. Gently fold in the optional add-ins if desired. Spoon the mixture into 12 muffin tins. If you wish you can sprinkle the top with some more oats and cinnamon or chopped walnuts. Bake for about 20-25 minutes until an inserted toothpick comes out clean and let cool in the open oven for 10 minutes before allowing it to cool or another 5-10 minutes outside the oven! |
